Portuguese Chilled Gazpacho
Serves 4

Ingredients
2 garlic cloves, peeled and sliced roughly
2 tsp coarse sea salt and a generous grinding of black pepper
2 tbsp fresh oregano
50ml/2fl oz olive oil
50ml/2fl oz wine vinegar (or sherry vinegar)
250g/9oz stale bread, torn into small pieces (use unbleached bread such as pane pugliese or ciabatta)
1kg/2¼lb ripe tomatoes, seeded, cored and finely chopped, reserve the juice
1 cucumber, peeled and finely chopped
2 red or green peppers, seeded and finely chopped
510ml/17fl oz water and ice cubes

Method
1. Crush the garlic, salt, pepper and oregano to a paste then whisk in the oil and vinegar.
2. Add the bread and tomato juices and leave to soak for 10 minutes.
3. Combine the tomatoes, cucumber, peppers and iced water and serve with a drizzle of oil.
