Marinated Mushroom and Cheese Salad
Serves 4
Ingredients
Marinade:
150ml/¼ pint tropical fruit juice
3 tbsp olive oil
coarsely ground black pepper
Salad:
450g/1lb button mushrooms
3 sticks celery, sliced thinly
2 ripe pears, peeled, cored & sliced
175g/6oz blue cheese, chilled, then cubed
Method
1. Whisk marinade ingredients together.
2. Slice half the mushrooms and add to the marinade with the remaining whole mushrooms.
3. Reserve celery leaves.
4. Stir celery, pears and cheese into the mushrooms.
5. Garnish with celery leaves.
