Lemon Mousse with Glazed Bananas
Serves 1

Ingredients
For the mousse
150ml/5fl oz double cream
1 lemon, zest only
½ lemon, juice only
2 tbsp icing sugar (optional)
For the banana
1 banana, peeled and sliced
icing sugar, to dust

Method
1. For the mousse, place the cream, lemon zest and juice and icing sugar into a large bowl and whisk together until thick, creamy and smooth.
2. Place a large chefs' ring onto a serving plate and spoon the lemon mixture into the ring. 3. Smooth off the top using a palette knife and then remove the ring.
4. To make the bananas, layer the banana slices on a baking tray and generously dust each slice with icing sugar, to cover.
5. Using a blowtorch, carefully glaze the bananas until golden and caramelised.
6. Arrange the glazed bananas around the edge of the mousse and serve at once.
