Carrot Salad
Ingredients
2 carrots, peeled
1 orange, juice only
2 tbsp olive oil
handful parsley, roughly chopped
salt
freshly ground black pepper
Method
1. Use a potato peeler to slice the carrots thinly or slice carefully with a knife.
2. Put the carrot strips in a bowl with all the other ingredients.
3. Toss to mix the dressing and coat the carrots.
4. Serve.
