Marinated Mushroom and Cheese Salad
Serves 4
Ingredients
7 small tomatoes on the vine
3 cloves garlic, chopped
1 tbsp balsamic vinegar
1 tbsp olive oil
salt and freshly ground black pepper
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Heat the oil in an ovenproof frying pan. Add the tomatoes (still attached to the vine), vinegar and garlic and season with salt and pepper.
3. Cook for 2-3 minutes, then transfer to the oven for 5 minutes or until the skins are beginning to burst. Serve at once.
