Beetroot Gratin
Serves 1-2

Ingredients
30g/1oz butter
˝ beetroot, peeled and grated
2 tbsp red wine vinegar
1 tbsp red wine
85g/3oz stilton, crumbled
salt and freshly ground black pepper

Method
1. Preheat the oven to 250C/500F/Gas 9.
2. Melt the butter in a medium fry pan.
3. Add the beetroot to the pan and sauté for 3 minutes.
4. Add the red wine vinegar, red wine and seasoning and leave to simmer for 5 minutes.
5. Remove the pan from the heat and top with the stilton.
6. Transfer the pan to the oven and bake for 2-3 minutes, or until the cheese has melted.
7. Remove the pan from the oven and spoon the gratin into a dish for serving.
