Beetroot Chutney
Serves 2
Ingredients
1 glass red wine
1 vanilla pod
1 tsp chilli flakes
1 tsp ground cinnamon
55g/2oz soft brown sugar
55ml/2fl oz red wine vinegar
4 cloves
1 beetroot
8 x 2cm(0.8in) cubes of cheddar cheese
½ tsp sesame seeds
Method
1. Place the red wine, vanilla pod, chilli flakes, cinnamon, sugar, vinegar and cloves into a medium saucepan for 2-3 minutes.
2. Peel and grate the beetroot wearing rubber gloves to prevent staining your hands.
3. Add the beetroot to the pan, reduce the heat and gently simmer for 15-16 minutes.
4. Meanwhile, skewer the cheese cubes onto cocktail sticks.
5. Remove the beetroot chutney from the heat and transfer to a serving dish.
6. Sprinkle the chutney with the sesame seeds and serve the cheese sticks alongside.
