Broad Bean and Brie Salad
Serves 2
Ingredients
350g/12Ľoz fresh broad beans, podded
˝ lemon, zest and juice
2 tbsp olive oil
1tbsp fresh flat-leaf parsley, chopped
85g/3oz brie cheese, cut into 6 equal slices
salt and freshly ground black pepper
Method
1. Place beans in a bowl and cover with freshly boiled water.
2. Stand for 3-4 minutes.
3. Drain and skin the beans.
4. In a small bowl mix lemon zest, juice, oil and seasoning.
5. Toss beans in the dressing with parsley.
6. Serve each portion of beans topped with 3 slices of brie cheese.
